Roast Chicken

Ingredients

 

  • 1 free-range pref organic chicken

  • 1-2 lemons or clementine

  • 2 sprigs rosemary

  • 1 tablespoon fennel seeds (optional)

  • olive oil

  • salt and pepper

 

Method

 

  1. Pre-heat your oven to 180ºC.

  2. Place the chicken into a large roasting dish or casserole dish.

  3. Stuff with the rosemary and citrus fruit. (make little slices around the fruit so the juices can escape).

  4. Drizzle with olive oil and season with salt and pepper.

  5. Roast for 1 -1 1/2 hours until the juices run clear and the legs are loose when you pull.

  6. Allow to rest for 15 minutes, before serving.
