Soak the dates and the cardamon in the orange juice for a couple of hours or overnight if possible.
Pick out the dates from the orange juice and place into a food processor. Pour remaining orange juice through a sieve to remove the cardamon pods and add to food processor. Then add remaining ingredients except for the orange segments, cacao nibs and pistachio nuts.
Process until smooth (3-4 minutes).
Spoon into serving cups or glasses and refrigerate for at least an hour.
Garnish with nuts, cacao nibs and orange segments.
