This is honestly so delicious and seriously easy to make. You just throw all the spices in a big bowl with the meat and veg and let it sit in the fridge until you are ready to cook. Then spread it out on a tray and pop it in the oven for 30-45mins. Voila you have a delicious meal with no messy prep to clean up. It is what I like to call a "One Tray Wonder".
It might seem a bit daunting the number of ingredients, but a trip to your local Asian Supermarket or Indian Market to stock up your spice rack will give you such a great resource to make many a boring ingredient out of this world.
You will need...
4 garlic cloves crushed
1 tsp Cumin Seeds
1 tsp Mustard Seeds
1/4 tsp Turmeric
1 tsp Cumin (Ground)
1 tsp Coriander (Ground)
1 tbsp Paprika
1/4 tsp Cinnamon
1/4 tsp of Cayenne Pepper (I leave this out because my Kids don't like it too spicy)
1 tsp fresh ginger (finely grated)
5 tbsp Olive Oil
2 tsp salt
2 Asian Aubergines (Optional)
300g Potatoes Cubed
300g Pumpkin Cubed
8 Boneless Chicken Thighs
200g Cauliflower (broken into florets)
100g Broccoli (broken into florets)
1/2 cup cashew Nuts
Bunch of Fresh Coriander Chopped
Heat the oven to 200ºC on fan bake.
In a large bowl mix the onion, garlic, ginger, spices and olive oil.
Then add to the bowl the potatoes, aubergines, pumpkin, and chicken.
Spread the mixture out on a large, lined, baking tray or two smaller ones.
Place in the oven for 20minutes.
After 20 minutes mix in the Cauliflower, Broccoli and Cashews nuts.
Place back into the oven for another 10 minutes until the Cauliflower is slightly golden and nuts roasted.
