Vegan Chocolate and Walnut Brownies

Chocolate and Walnut  Brownie... this was a hit with the kids and used up some leftover sweet potato we had around... yes sweet potato!

 

I've used dehydrated Raspberry powder on the top to make it look a bit fancy. Try this out for a healthy alternative to the usual sugar and gluten laden brownie recipes. It's also egg free being vegan so great for those of you whom eggs are a problem.

 

 

Vegan Chocolate and Walnut Brownie 

 

500g steamed sweet potato (cooled)
6 tbsp maple syrup
2 tbsp coconut oil
15 dates ( soaked In Hot h2o )
100g ground oats (I use my NutriBullet) or almond meal 
6 tbsp cocoa powder or raw cacao powder
Pinch salt
1/2 cup Walnuts crushed slightly 

Raspberry powder to decorate 

 

In a food processor add the potato, dates, maple syrup and coconut oil. Wiz until smooth.
Mix the dry ingredients in a bowl and then mix in the wet sweet potato mixture.
Spread into a lined slice pan and bake at 180 deg C for 45-55 minutes. 
Allow to cool completely before taking out of the pan.
Sift over powder and slice.


Serve with coconut yogurt or organic yogurt and fresh raspberries.
