Sugar cravings are a pain!

 

Once you get on that sugar hit roller coaster it can be pretty hard to get off! These little bars of coconut goodness are just the ticket for staving off those sugar cravings.

 

They are packed with good fats and protein - the perfect combination to satisfy and satiate even the most ravenous sugar monster!

 

I keep them in the freezer for those 4pm moments when I am craving something truely disgusting! 

 

Healthy Bounty Bars

 

Coconut filling

 

  • 1 cup of raw cashews 

  • 1/2 cup coconut cream

  • 2 tablespoons maple syrup

  • 2 1/2 cups desiccated coconut

  • 4 tablespoons coconut oil

 

Chocolate Coating

 

  • 4 tablespoons coconut oil

  • 2 tablespoons maple syrup

  • 2 tablespoons good quality cocoa powder

 

Method

  1. Place all the ingredients for the coconut filling into a food processor. Mix until a paste-like consistency its achieved (similar to thick hummus).

  2. Line a slice pan with baking paper and spread the paste out evenly using the back of a spatula. (This can be a bit tricky, but I've found pressing it down with a rubber spatula works fairly well.)

  3. Place into the freezer for 10 minutes until firm enough to slice into bars.

Whilst you are waiting for the bars to firm up, make the chocolate coating.

 

Method

 

  1. Heat the coconut oil gently in a saucepan. Then add the maple syrup and cocoa powder, whisk to combine fully.

  2. Place a wire rack over a chopping board. Ensure the chocolate coating has cooled down and thickened slightly. Dip each of the bars into the chocolate sauce and place onto the rack. Then put all of the coated bars into the fridge to firm up the chocolate.

  3. You can dust them with a bit of powdered, freeze dried strawberries or icing sugar if you fancy. 

  4. Once they are firm, transfer from the rack to a plastic container and store in the freezer.

 

They are best left to soften for a few minutes before eating if straight from the freezer.
