Spiced Pear and Ginger Tart

This gorgeous tart celebrates everything good about winter! Its gently warming spices are perfect for a winters night and the sweetness from the pear is sure to bring a smile to everyones faces. Super simple to make and truely a favourite in my house!

Spiced Pear and Ginger Tart

 

Ingredients

 

  • 1/2 cup coconut sugar

  • 125g butter or coconut oil (softened)

  • 2 free range eggs

  • zest from 1 orange or lemon

  • 1/2 teaspoon fresh ginger finely grated

  • 1/4 cup milk of your choice

  • 1 apple peeled and grated

  • 1/2 cup flour (brown rice, buckwheat, spelt, wheat)

  • 3 heaped tablespoons ground almonds 

  • 1 teaspoon cinnamon

  • 1/4 teaspoon freshly grated nutmeg

  • 3 ripe pears, peeled, halved and deseeded (I use a teaspoon to scoop out the seeds and stringy bit up to the stalk).

  • 1 teaspoon baking powder

 

 

Method

  1. Grease and line a small to medium sized tart tin. Heat the oven to 175ºC.

  2. In a small food processor cream together the sugar and butter (or coconut oil).

  3. Add the eggs one at a time mixing well between additions.

  4. Transfer to a large bowl.

  5. Fold through the grated apple, zest, ginger and the milk.

  6. Sift over the dry ingredients and gently fold this into the wet mixture.

  7. Spread evenly around the bottom of the tart tin using a spatula.

  8. Press the pears into the mixture until they are semi-submerged.

  9. Bake in the oven for 30 - 40 minutes or until golden and cooked through.

  10. Serve with cream, coconut yogurt or ice-cream - delicious!
