Apricot and Dark Chocolate Muesli Bars

These Muesli Bars are super easy to make and don't even require and oven because they are raw! They make great additions to lunch boxes (if you can keep them cold with an ice pack) or for an afternoon snack to get the kids (and you) through the rest of the day until dinner time.






1 cup dried apricots 

2 cups rolled oats

1 cup shredded coconut

3/4 cup coconut cream

1/2 cup coconut oil (melted)

2 tablespoons maple syrup or honey

1 teaspoon cinnamon

1 bar good quality dark chocolate at least 70% cocoa




  • Add the apricots to a food processor and pulse until roughly chopped.

  • Add the remaining ingredients except the chocolate and process until combined.

  • Press the mixture into a slice tin lined with baking paper.

  • Place in the freezer to set while you melt the dark chocolate.

  • Place a bowl over a pot of boiling water,  break up the chocolate and allow to melt gently.

  • Remove the slice from the freezer and pour over the chocolate, spread out thinly and replace tin the fridge to set.

  • Once set slice into bars and keep in the fridge for 3-4 days.
