Chocolate, Orange and Pistachio Fudge
These are the perfect little treats to have stashed in the freezer for when friends and family unexpectedly turn up, or when you are needing a little sweet treat, but don't want to go overboard.
This is my healthier version of chocolate and orange fudge, without all of the refined sugar.
Super simple to make if you have a food processor and ready in minutes.
1 ½ cup dried dates
1 ½ cup pumpkin or sunflower seeds
1 ½ cup desiccated/shredded coconut
3 heaped teaspoons coconut oil
4 tablespoons unsweetened cocoa powder
Zest of one orange
½ cup chopped pistachios
Soak the dates in hot water for 5 minutes.
Drain and add to a food processor along with the other ingredients except the pistachios.
Process to a dense paste.
Line a slice tin with baking paper and spread the chocolate paste out on the base using the back of a spoon.
Press chopped pistachios into the top and place in the freezer to set.
Slice into squares and store in the freezer or fridge.
