Turmeric and Ginger Biscuits

December 19, 2017

Turmeric is a powerful anti-inflammatory and what better way to get it into your diet than to include it in a yummy sweet treat! They are super delicious and don't contain any gluten, dairy or refined sugar. They are also perfect for those paleo peeps out there.

250g (2 1/2 cups)  ground almonds (almond meal)

1 tsp ground turmeric

1 tsp cinnamon

1 tsp ground ginger

1/4 tsp ground black pepper

1/2 tsp baking soda

pinch salt

80ml mild olive oil

100g (1/2 cup)  runny honey

* * Preheat the oven to 175ºC.

* * Line a baking tray with baking paper.

  1. Combine all the dry ingredients in a bowl and whisk together.

  2. Add the olive oil and honey and stir well.

  3. Press into tablespoon-sized balls and place onto the baking tray.

  4. Using a damp hand flatten each ball until about 1cm thick.

  5. Bake for 15 minutes until golden around the edges.

  6. If you want crisp biscuits, turn off the heat, leave the oven door ajar and allow the biscuits to cool down in the oven. This dries them out further ensuring they are crisp.
