Grilled Peach and Haloumi Salad with Bacon, Walnuts and Pickled Red Onion

This salad really celebrates summer, and is great for BBQ's. The sweet peaches work so nicely with the salty haloumi and bacon. Finished with crunchy walnuts and pungent pickled onions, you have all your flavours covered, creating a tastebud sensation if you want to get very dramatic about the whole thing!





1/2 red onion, thinly sliced

juice of 1 lemon


150g haloumi cheese, sliced

2 peaches, cut into 8 wedges each

4 rashers of quality streaky bacon

1/2 cup toasted walnuts

4 - 6 large handfuls of mixed salad greens



Juice of 1/2 lemon

Drizzle of olive oil





  1. In a small bowl, mix the sliced onion with the lemon juice and a good pinch of salt.  Set aside to pickle.

  2. Heat the barbecue grill or skillet.

  3. Cook the bacon until crisp and set aside to cool.

  4. Grill the peaches and haloumi until charred but not too soft.

  5. Arrange the salad leaves on a plate followed by the bacon, peaches and haloumi cheese.

  6. Drain the onion and add to the salad along with the toasted walnuts.

  7. Finally, just before serving, drizzle with a little olive oil and a good squeeze of lemon juice.
