Autumn Super Slaw

This coleslaw is the perfect Autumnal salad. 


I encourage all my clients to aim for at least half their plate fresh or cooked, water-based vegetables.

Doing this is a game changer and will be one of the most simple and effective things you can do for your health. 


With so many diets out there it is easy to get confused, but the key similarity between all healthy ways of eating is ensuring you are consuming predominantly plants in their fresh, whole form.



Autumn Super Slaw




  • 1 large courgette, grated or in small matchsticks

  • 1 large carrot, grated or in small matchsticks

  • 1 cup red cabbage, very finely sliced

  • 1 cup white cabbage, very finely sliced 

  • 3/4 cup black grape, halved

  • 1/4 cup basil, finely sliced

  • 1/2 cup walnut, roughly chopped

  • 1 apple, grated or in small matchsticks

  • double handful spinach or kale, finely sliced


  • Juice and zest of one lemon

  • 3 tablespoon good quality olive oil

  • generous pinch of salt

  • grind of black pepper





  1. Combine all the ingredients in a large bowl and mix well.
