Apple Cinnamon Muffins (makes 12)
1 cup homemade stewed apple
½ cup coconut flour
2 tablespoon cinnamon
1 teaspoon baking soda
100 g ( ½ cup ) butter or coconut oil melted
2 tablespoons honey (optional)
Sliced fresh apple (for garnish)
Preheat the oven to 180ºC.
Grease a muffin tin with butter or coconut oil.
Place all the ingredients into a food processor and pulse until well incorporated.
Spoon the mixture into the holes evenly and top with a piece of sliced apple.
Bake for 15 minutes until starting to brown and the muffin springs back when touched.
Allow to cool before removing from the tin.
