Lemon and Garlic Salad with Fennel and Pistachio Nuts

 

 

Ingredients

 

  • ½ head broccoli

  • ½ head cauliflower

  • ½ cup chopped parsley

  • ½ cup chopped fresh coriander or mint

  • 2 garlic cloves, crushed

  • zest and juice 1 lemon

  • ¼ cup extra virgin olive oil

  • ¼ teaspoon salt

  • 1 tablespoon fennel seeds

  • ½ cup pistachio nuts 

 

Method

 

  1. Roughly chop the broccoli and cauliflower into florets, place in a food processor and pulse until finely chopped.

  2. Pour the chopped broccoli and cauliflower into a large bowl and add the chopped herbs, garlic, lemon, oil and salt. Mix well.

  3. Heat a small frying pan and toast the fennel seeds gently then add to the salad, along with the pistachio nuts.
