Blueberry and Collagen Chia Pudding (serves 2)
¼ cup chia seeds
1 ½ cups almond milk
1 tablespoon of coconut oil or butter
1 teaspoon honey
¾ cups blueberries
2 tablespoon collagen powder ( I use Great Lakes brand)
Place the chia seeds into a bowl.
Add to a high speed blender the remaining ingredients and blend for 45 seconds.
Pour a little of the mixture into the bowl with the chia seeds. Mix well to ensure they don’t clump together. Add the remaining mixture, stir and place in the fridge for at least 2 hours.
Serve with berries and grated coconut.
