I actually haven't baked in a long time. I think I was getting a little too adventurous with my healthy baking and the kids kinda went off anything that I made... so to be honest I gave up for a while.
Then the other day I had the urge to get back to baking and I thought that these simple Chocolate Chunk Cookies might be just the thing.... and they were.
I'm back in the kids good books when it comes to baking.
Chocolate Chunk Cookies
250g butter, softened
1 teaspoon natural vanilla extract
3/4 cup (165g) organic golden caster sugar
3/4 cup (165g) coconut sugar
1 egg
2 1/4 cup (335g) white spelt flour
1 teaspoon baking soda
200g dark chocolate, coarsely chopped
Preheat the oven to 180ºC. Line 2 baking trays with baking paper.
Beat the butter, vanilla, sugars and egg tougher in a bowl with an electric mixer until light and fluffy and sugar has dissolved.
Transfer mixture to a large bowl; stir in sifted flour and soda in two batches.
Stir in chocolate.
Roll tablespoons of mixture into balls; place on trays.
Bake for 15 minutes or until golden.
