Spiced Pear Breakfast Parfait


In the depths of winter, cold granola with cold fruit and yogurt is not really what I crave. I'm looking for some warmth in the morning.

That is why I came up with this idea.

Pears are gently sautéed in a little butter, ginger, orange zest and cinnamon, then topped with coconut yogurt and homemade granola.

The result is delicious!

Try this for breakfast or even dessert for a dose of healthy fats, protein and general yumminess.

 

Ingredients (serves 1)

  • 2 tablespoons coconut yogurt

  • 2 tablespoons home made paleo granola (see recipe here)

  • 1 teaspoon butter

  • 1/2 pear, diced

  • pinch cinnamon

  • 1/4 teaspoon finely grated ginger

  • 1/4 teaspoon finely grated orange zest

 

Method

  1. Melt the butter in a frying pan.

  2. Add the pear and spices.

  3. Gently sauté for 2-3 minutes, until the pear begins to soften.

  4. Arrange the pears in a glass along with the yogurt and granola.
