Chia Sunrise Pudding


This chia pudding is a gorgeous way to start your day. Because it is made ahead of time, you have more space in your morning to enjoy a moments peace, before the onslaught of demands and expectations.

CHIA SUNRISE PUDDING

(makes 500 ml or 2 puddings)

Ingredients

  • 1 banana

  • 3/4 cup of coconut yogurt

  • 3/4 cup fresh orange juice

  • 1 raw egg

  • 1/2 cup white chia seeds

on top...

  • 1 handful pineapple, diced

  • 1 dollop coconut yogurt

  • orange zest

  • coconut chips

Method

  1. Place all the ingredients except the chia seeds into a high speed blender.

  2. Blend until smooth.

  3. Pour a little into a large jar, add the chia seeds and stir.

  4. Then add the remainder of the chia seeds.

  5. Mix well and chill overnight.

  6. Serve with pineapple chunks, coconut yogurt, orange zest and coconut chips.
